BLUEBERRY AND VANILLA SMALL BITES 🥞

Berry and vanilla blend is one of my favorite sweet and sour flavors! These little bites are perfect for babies, but with a few less "healthy" additions, they'll be perfect for older kids who want a sweeter snack!

Ingredients :

  • 1 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 2 tbsp melted butter
  • 1 pinch of salt
  • 1 cup of 10% plain yogurt
  • 1 egg
  • 2 tsp natural vanilla extract
  • 1 cup thawed blueberries

Preparation :

  1. Mix the flour, salt and baking powder and set aside.
  2. Mix the butter and yogurt then add the egg and vanilla.
  3. Mix well and add the blueberries, crushing them slightly.
  4. Gradually add the dry ingredients.
  5. Once the mixture is smooth, divide between two Liewood molds (or muffin molds – will make about 12 muffins) .
  6. Bake at 375F for 25 minutes.

This recipe can be stored for up to 5 days in the refrigerator and up to 3 months in the freezer.

DME Specifications:

This recipe can be offered from 6 months by cutting the bite (or muffin) in half and serving one half at a time.
*Beware of egg and dairy allergens, which should be introduced according to the recommendations for introducing priority allergens. Full-fat yogurt is a better choice for babies who do not need to be restricted in fat!

ALTERNATIVES:

For older children, replace the plain yogurt with vanilla yogurt and add 1/3 cup of sugar to the recipe!
Did you know you can replace eggs with “chia eggs”?
For each egg to be replaced, mix 1 teaspoon of ground chia seeds with 3 tablespoons of room temperature water (water that is too cold slows down the mucilage).
Stir well, and let stand for at least 15 minutes.
You can then use your “chia egg” to replace your egg in a recipe!
