Easter Egg Cookies 🥚

Since chocolate and overly sweet treats are not recommended for babies, here's a perfect snack idea to celebrate Easter! A great way to end an Easter egg hunt ☺

Ingredients :

  • 1 1/4 cups quick-cooking oats*
  • 3 tbsp natural peanut butter
  • 3 tbsp maple syrup (optional; not recommended for babies)
  • Plain yogurt, fruit and fancy toppings of your choice!

*quick-cooking ones allow for a softer texture that will hold together better.

Preparation :

  1. Heat the peanut butter for 20 to 30 seconds in a microwave-safe bowl or in a saucepan over low heat. Stir halfway through.
  2. Slowly add the oatmeal to the softened peanut butter and mix until a paste-like consistency is achieved.
  3. Flatten the mixture on a baking sheet and shape into oval shapes to represent the eggs.
  4. Spread with yogurt and other decorations, let sit for 1 or 2 hours in the refrigerator and enjoy!

This recipe can be kept in the refrigerator for up to 3 days. Do not freeze.

To turn this recipe into a treat you can enjoy without baby, you can add 3 tbsp of brown sugar to the mixture and serve with a milk chocolate drizzle!
