RASPBERRY LEMONADE DONUTS 🍩

With summer drawing to a close, I'm craving one last summery creation: raspberry lemonade seemed fitting. These slightly tangy donuts are sure to please your little ones during the last of the beautiful warm days!
Ingredients :
- 2 cups fresh raspberries
- 1 lemon
- 1 egg
- 1 cup all-purpose flour
- 1 tsp baking powder
Preparation :
- Zest the lemon and set aside.
- Squeeze half of the lemon and reserve the juice.
- Mash the raspberries with a fork, then sprinkle with lemon juice.
- Add the zest and mix with the egg.
- Add the flour and baking powder, then mix well until smooth.
- Divide into donut molds (well greased or silicone).
- Bake at 375F for 15 minutes.
This recipe can be stored for up to 5 days in the refrigerator and up to 3 months in the
freezer.

ALTERNATIVES
To turn this recipe into a treat you can enjoy without baby, you can add 3 tbsp of maple syrup and top with a sweet berry coulis!
Did you know you can replace eggs with “chia eggs”?
For each egg to be replaced, mix 1 teaspoon of ground chia seeds with 3 tablespoons of room temperature water (water that is too cold slows down the mucilage).
Stir well, and let stand for at least 15 minutes.
You can then use your “chia egg” to replace your egg in a recipe!
